A CLASSY BROAD'S Awesome Pecan Recipe

A CLASSY BROAD'S AWESOME PECANS

Roast 1 lb. (about 3 cups) pecan halves for 15 minutes in 300-325 oven. In the meantime, spread wax paper on a cookie sheet or a large wooden surface.

Next, in a heavy saucepan: 
Mix 1 cup sugar
1 1/2 teaspoon cinnamon
1 teaspoon salt
Add 1/2 cup water and mix well.

Cook over medium high heat to 238 degrees. Or if you don't have candy thermometer, you can drop a small amount into cold water and use your fingers to form a soft ball.

Remove from heat. stir with wooden spoon and add 1 1/2 teaspoons vanilla. Be sure it is well-mixed.

Put the roasted pecans in a large bowl. Add the syrup, mix well. Pour out onto waxed paper. Separate the pecans with two forks and let them cool.

Store in any kind of container. Or can be left in candy dish. Stays fresh and tasty for a long time. 

Final note: this recipe can be doubled and tripled.
